Maple Mead

This is something i invented on a whim in an effort to use up some overdone (read: burnt) maple syrup that we made one winter.  This is the one single best brew i have ever brewed.

maple syrup (extra dark, burnt if possible... but you're not supposed to burn it)

water

cup
yeast nutrient (it needs all it can get)

pkt
sherry or champagne yeast

  • Mix it together. Seal with air lock and stick it in a warm place. It will bubble a lot for the first few days.
  • Rack after 2 weeks.
  • Rack again two or three times over the next three months.
  • Bottle.
  • Age 1-2 years.
Unfortunately i can't find my little brewing notebook from when i first made this, but if i remember correctly, the OG was something insane like 1.170.  FG was around 1.050.
