This is something i invented on a whim in an effort to use up some overdone (read: burnt) maple syrup that we made one winter. This is the one single best brew i have ever brewed.
|2||gal.||maple syrup (extra dark, burnt if possible... but you're not supposed to burn it)|
|½||cup||yeast nutrient (it needs all it can get)|
|1||pkt||sherry or champagne yeast|
- Mix it together. Seal with air lock and stick it in a warm place. It will bubble a lot for the first few days.
- Rack after 2 weeks.
- Rack again two or three times over the next three months.
- Age 1-2 years.
Unfortunately i can't find my little brewing notebook from when i first made this, but if i remember correctly, the OG was something insane like 1.170. FG was around 1.050.
