Curry Powder

Sadly, like chili powder, curry powder is another spice i have not quite mastered, but offer this only as an "In-A-Pinch" solution until I have a chance to perfect it.  It doesn't help that every asian grandmother from India to the Indonesia has her own curry recipe.  Anyway, this worked well enough, and i'll update this as soon as i perfect the recipe.

2
tbsp
turmeric powder
1
tbsp
ground cumin
1
tbsp
chili powder (Redundant? Why yes it is.)
2
whole
black cardamom pods, ground and shelled
1
tbsp
green cardamom pods, ground and shelled
1
tsp
coriander, ground
½
tsp
ground cinnamon
½
tsp
allspice
½
tsp
clove

tsp
nutmeg
1
tbsp
paprika
1
tbsp
black pepper
1
tbsp
onion powder or onion salt
1
tbsp
garlic powder or garlic salt
1
tbsp
kalonji (Nigella sativa seeds), ground
  • Put it all in a spice grinder and have at 'em.
(The first time i tried this, it had a rather unpleasant taste, a little like Vick's Vapo-Rub.  I think it was due, at least in part, to the black cardamom pods.  The recipe above, consequently, contains only half as many.)
