Sadly, like chili powder, curry powder is another spice i have not quite mastered, but offer this only as an "In-A-Pinch" solution until I have a chance to perfect it. It doesn't help that every asian grandmother from India to the Indonesia has her own curry recipe. Anyway, this worked well enough, and i'll update this as soon as i perfect the recipe.
|1||tbsp||chili powder (Redundant? Why yes it is.)|
|2||whole||black cardamom pods, ground and shelled|
|1||tbsp||green cardamom pods, ground and shelled|
|1||tbsp||onion powder or onion salt|
|1||tbsp||garlic powder or garlic salt|
|1||tbsp||kalonji (Nigella sativa seeds), ground|
- Put it all in a spice grinder and have at 'em.
(The first time i tried this, it had a rather unpleasant taste, a little like Vick's Vapo-Rub. I think it was due, at least in part, to the black cardamom pods. The recipe above, consequently, contains only half as many.)
