Too often, people think cooking poultry is just cooking chicken. And just as often, foodie people think poultry is anything but chicken, and that chicken is some sort of evil filler. I'm middle-of-the-road on this one: I love chicken, and i also love a lot of other tasty little birdies. For the most part, though, poultry is pretty interchangeable in recipes. Feel free to substitute pheasant, game hen, or guinea fowl for chicken. (But not quail - they're too small; they'll make you crazy. ) The only thing that doesn't really overlap, culinarily speaking, in the bird kingdom is waterfowl. ...which i don't believe are really considered poultry anyway.
